Blueberry muffins and Luna's at it again.

As per request from one of my closest friends Clare. She doesn't like bananas and asked for the blueberries. It's pretty much the same as the Banana muffins but I will still give you the ingredients and how to. If you didn't catch the banana muffin recipe you can find it here.

She just can't help herself...


Ingredients :

1 cup spelt flour
1 cup whole wheat self raising flour
1/2 cup greek yoghurt
1/2 cup grape seed oil 
1/3 cup agave (you could sub honey if you'd like or maple syrup)
1 cup fresh (or frozen*) blueberries
1 1/2 tsp Cinnamon
2 eggs
1 tsp baking powder 
1 tsp baking soda
1 tbsp vanilla extract

Pre-heat the oven to 170 degrees C. Put the dry ingredients in a bowl and sift through with a spoon or fork. Whisk the wet ingredients together. Let the dry and wet ingredients meet in one bowl. Combine the two. Add in the blueberries. 

I used a wooden spoon to measure them into the lightly sprayed muffin tin. Put them in the oven for about 20 minutes and then let them cool on a cooling rack. 
I also made some for David with chocolate chips since he NEEDS chocolate. ;) 
So if you or significant other or anyone special is "allergic" to healthy foods and needs a bit more then at least opt for pure dark chocolate bits sans blueberries. 

*If you are getting frozen blueberries try to make sure that they weren't coated in any kind of syrup or any added sugar. Fruits already hold so much natural sugars in them, added sugars is unnecessary.
